Round is classic, but square and hexagonal are more current. “A
hexagonal shape immediately makes a cake look different,” says
Betty Baird, of Sweet Tiers in Palm Beach, Florida. Alternating
tiers—a round layer topped with a hexagon, then topped with
another round—has caught on too. Tiers of uneven heights, such
as a tall top and bottom and shorter middle layers, also give
cakes contemporary chic. Sherry Yard, executive pastry chef for
Spago Beverly Hills in California, says that when one of her
triangular cakes is wheeled out after dinner, guests go crazy.
