Easter Basket Cake

package (2-layer size) yellow cake mix
2 packages (4-serving size each) Instant Pudding and Pie
Filling, Lemon Flavor
4 eggs
1 cup water
1/4 cup vegetable oil
1-1/2 cups cold milk
3 1/2 cups (8 ounces) Whipped Topping, thawed
2-2/3 cups (7 ounces) Coconut
Cloth ribbon (optional)
Gumdrop Flowers (see below for directions) optional |
COMBINE
cake mix, 1 package of the pudding mix, eggs, water and oil in
large bowl. Beat at low speed of electric mixer just to moisten,
scraping sides of bowl often. Beat at medium speed 4 minutes.
Pour 3-1/4 cups of the batter into greased and floured 1
1/2-quart metal or ovenproof glass bowl; pour remaining batter
into greased and floured 12-inch pizza pan. Bake at 350 F. for
15 minutes for the pan and 50 minutes for the bowl or until cake
tester inserted in centers comes out clean.
COOL cakes 10 minutes. Remove from pan and bowl; finish cooling
on racks. If necessary, cut thin slice from flat end of
bowl-shaped cake so that it will sit flat; split
horizontally into 3 layers.
POUR milk into small bowl. Add remaining package of pudding mix.
Beat with wire whisk until well blended, 1 to 2 minutes.
PLACE 12-inch cake layer on large serving plate or tray. Spread
layer with 1-1/2 cups of the whipped topping. Center bottom
layer of bowl-shaped cake on frosted layer; spread with 2/3 of
the pudding. Add second layer; spread with remaining pudding.
Add top layer,forming the crown.
SPREAD remaining whipped topping over crown. Sprinkle coconut
over cake. Tie ribbon
around cake crown to form hat band and bow and garnish with
Gumdrop Flowers, if desired. Chill until ready to serve.

GUMDROP
FLOWERS
1. Flatten gumdrops with rolling pin on surface or sheet of
waxed paper sprinkled with sugar. Roll until very thin (about
1/16-inch thick), turning frequently to coat with sugar. |

Hold flattened gumdrops at center; overlap edges slightly to
give petal effect, pressing piece together at base to resemble
flower. For open blossom, bend gumdrop petals outward from
center. Insert small piece of gumdrop in centers with wooden
pick to attach flowers to cake if necessary. |

Gelatin
Easter Baskets
1 package (4-serving size) JELL-O
Brand Gelatin, any
flavor
1 cup boiling water
1/2 cup cold water
1/2 cup BAKER'S ANGEL FLAKE Coconut
Food coloring
Jelly beans
Red string licorice
DISSOLVE gelatin in boiling water. Add cold water. Pour into
individual ring molds or 6-ounce custard cups. Chill until firm,
about 2 hours.
TINT coconut as desired with food coloring.
UNMOLD gelatin onto individual dessert plates. Sprinkle coconut
into center of each mold for "grass" . Place jelly
beans on top of coconut. Cut licorice for basket handles; insert
in molds.
MAKES 4 servings

Honey Glazed Easter Ham
4 lb Ham; boneless, fully cooked
1 can Lemon-lime soda; 12 oz,
1/4 cup Honey
1/2 tsp. Mustard
1/2 tsp. Cloves; ground
1/4 tsp. Cinnamon; ground
Place ham and lemon-lime soda into crock pot. If your pot has a rack, you can use it. Cover and cook on low 6 to 8 hours (high 3 to 4 hours). Thirty minutes before serving, combine honey, mustard, cloves, and cinnamon, and 3 tablespoons drippings from bottom of crock pot. Spread glaze over ham and continue cooking. Let ham stand for 15 minutes before serving. Yield: 12
ServingsEaster Ham Sauce
1 cup crushed pineapple, undrained
1/4 cup brown sugar
2 tbsp. butter
2 tbsp. lemon juice
1/2 tsp. grated lemon rind
1/2 tsp. red food coloring
1/8 tsp. salt
1 cup canned, drained, pitted red sour cherries (save juice)
2 tbsp. corn starch
1/2 cup cherry juice
Into a saucepan mix together pineapple, sugar, butter, lemon juice, lemon rind, food coloring and salt. Heat slowly. In small bowl mix 1/2 cup canned cherry juice and corn starch, stir until smooth. Add to the fruit mixture. Stir constantly until sauce thickens. Lower heat and simmer 3 to 4 minutes. Serve hot over baked ham or broiled ham slices. Makes about 2 1/2 cups sauce.
Easter
Scavenger Hunt
The materials needed are as
follows: any number of plastic eggs, paper, pen, yard and
a lively group of kids that are ready to play a fun and
exciting Easter game.
This game is played like the old yet still fun game
scavenger hunt. All you do is hide all the eggs in various
places in the yard. You put a different clue in each egg
giving directions on where to find the next egg clue. Use
a designated color egg for each child or team. The last
egg clue will say where a prize can be found. Some prize
ideas might include: stuffed bunny , money, small toys,
chocolate egg or bunny, or easter basket full of different
goodies.
To start the game out give the kids a starting clue and
their designated egg color. Then you just sit back and
enjoy watching the kids entertain themselves.
Nosey Egg
Roll
Line kids up on a clean floor. Have a relay race with
kids rolling eggs only with their noses.
Capture the
Egg
Instead of playing the old favorite "capture the
flag" try "capture the egg!" Give each
team an equal amount of eggs 4 - 6.
